Denis I headed to the beautiful Port Willunga found quite possibly the best Barbie on a cliff above some caves and an old shipwreck on one of South Australia’s best beaches. The Fleurieu Peninsula is known for its amazing wine through the Mclaren Vale but what also keeps up its sleeve is what the locals know it for and thats is its free range chicken, egg farms, almond and honey! If the eggs are happy the chickens are too. This means tasty chooks. Right next door the Star of Greece just became Michelin selected so we needed to lift our barbie game!
Lets get that Barbie fired up.

INSTRUCTIONS
First things first let marinate our Chicken thighs, local chicken, fatty healthy and delicious. You can ask your local butcher to remove the bone, benefits of buying local. Keep the skin on.
I forgot a zip lock bag so we improvised and used a dog bag off the hanger! Dog poo bag chicken is a first on Aussie Park Barbies.
In the bag, smoked paprika, extra virgin olive oil, onion powder, cayenne pepper, sea salt and pepper. Give this a massage and well let the flavours marinate quickly before getting on the barbie.
Lets cut our brussel sprouts. The Sprout season is about to end so we are making the most of it. Cut the ends off, usually I would half but because we on a barbie we want the heat to get in there quickly I have cut these into quarters. Throw these In the bowl.
Pancetta time, shop local. If there is a small goods meat providor on the way to the barbie even better. Pork Belly dry aged with herbs and spices!
I used around half a fist full. I cut this thick, I wanted this to stand on its own against the sprouts, 1 cm cubes, the fat will render out and coat the sprouts.
In the bowl, Olive oil, sea salt and pepper and a good toss. Get these straight onto the Barbie.
I bought two jalapenos to lift the hot honey mustard a touch so I want these charred, straight onto the barbie whole.
Time to open up your dog bag chicken.
Skin side down, make sure your Barbie is hot. A good healthy fatty chook will release its fats and you wont need any extra oil on that barbie. This will take roughly 10 mins on either side depending on how hot your barbie is.
Hot honey mustard, By all means make your own Mayo ( maybe another episode) today we used a fresh whole egg mayo. Place this in a small bowl, don’t underestimate your bowl. Next teaspoon honey, Mclaren vale has so many almond blossoms buy local if possible and try the botanics in new regions, teaspoon Dijon mustard and a teaspoon seeded mustard. There is a big difference between cheap and higher quality mustard this is something always choose the best you have capacity for.
Mix together, the mayo balances the vinegary kick of the mustard. Add a little lemon zest.
The Jalapenos should be nice and charred, lefts chop these and atop the hot honey mustard sauce.
At this point I would have used my can of Chick peas I had Opened and had straining on the post…. If doing this at home add into the brussel sprouts now.
Sprouts need a fair bit of time to soften, by now the pancetta would be rendering and it will be hot charring and smelling delicious. I added some white wine balsamic, a squeeze of lemon and placed my bowl or improvised lid over our sprouts to finish with some steam.
Flip chicken, this should release with ease and that skin should be nice and crispy.
Floral Dukkah, small pinch rose petals, ground roast wattle seed, walnuts, macadamias, pistachios and sesame seed mix together into a little alfoil pouch. This will only need a few minutes to get some colour and release their flavour so straight onto the barbie.
Time to plate. Brussel Sprouts on with the chunks of pancetta. Pancetta and parmesan are pretty well Romeo and Juliet give a solid shaving over the top. Squeeze of lemon. Take your dukkah off run a knife and crush down the mix. Sprinkle over the sprouts. Slice your chicken thighs, make sure there is a bit of crispy skin on each piece. Get that Hot Honey mustard sauce on top. Leave some aside as this will be great for dipping those sprouts and chicken into.
